Ingredients

  • 1 cup whole spelt flour
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 1 pinch salt
  • 4.5 oz sourdough discard
  • 1 cup organic soy milk
  • 3 tbsp applesauce
  • 2 tbsp vegan yogurt
  • 2 tbsp maple syrup
  • 2 tbsp olive oil
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, mix the flour, baking powder, baking soda and salt.

  2. In a separate bowl, mix the sourdough, soy milk, olive oil, applesauce, vegan yogurt, maple syrup and vanilla extract.

  3. Add the wet mixture into the flour mixture, and mix just to combine. Cover and set aside for 15 minutes.

  4. Place a non-stick pan over medium heat, oil with some olive oil. Pour 1 scoop of pancake batter, cook for 1-2 minutes and flip it over the edges begin to puff up and some bubbles appear. Repeat the cooking process until you are finished with the batter.

  5. Serve with maple syrup, fresh fruit and homemade vegan yogurt.
