Vegan Baked Feta And Cherry Tomato Pasta Sauce

Yes everyone is making it.

But I like to follow trends every once in a while.

Anyway, this is my version of the Vegan Baked Feta And Cherry Tomato Pasta.

For the vegan feta cheese

  • 10.5 oz firm tofu
  • 3 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp nutritional yeast
  • 1 tsp miso
  • 0.25 tsp salt
  • 1 tbsp coconut oil (optional)

For the cherry tomatoes

  • 35.25 oz colorful cherry tomatoes
  • 2 sliced garlic cloves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano

  • 1 package pasta
  • 1 handful chopped fresh basil


  1. Preheat the oven to 395°F (200°C).

  2. Prepare the vegan feta cheese - using a high-speed blender or a food processor, blend all the feta ingredients together until smooth. Taste and adjust the flavors as needed.

  3. In a large baking dish or an ovenproof frying pan, mix the tomatoes, garlic, salt, and pepper. Add the feta cheese, thyme, and oregano, and drizzle the olive oil.

  4. Place in the oven and bake for 30 minutes.

  5. In the meanwhile, prepare the pasta (I used spelt fusilli pasta).

  6. Remove the pan from the oven, add the pasta and basil, mix together and serve.
