Homemade nutritious popsicles that you can make with your toddlers and kids.

Sometimes I get specific recipe requests, and I’m always up for the challenge.

This time the request was to create rich, nutritious popsicles with nut butter, so I did.

They are super delicious, and very easy and fun to make together with our younger ones.

Popsicles

Ingredients

  • 0.75 cup soy milk
  • 1 tsp vanilla extract
  • 4 pitted dates
  • 12 fresh/frozen strawberries
  • 2 tbsp almond butter
  • 1 tbsp chia seeds

Instructions

  1. Using a high-speed blender, blend all ingredients together until smooth. Taste and adjust, adding 1-2 more dates or strawberries if needed.
  2. Pour into a popsicle mold, add the sticks and freeze until solid (normally, a minimum of 6 hours).
  3. Release the popsicles and serve.

Notes

To easily release the popsicles from the mold, fill your kitchen sink with room temperature water, and place it inside for a few seconds. Make sure the water does not go above the top of the mold.
