One of our favorite routines as a family is making dinner together.

This egg-free scramble is our latest favorite. Tom just loves to crumble the tofu with his hands!

The texture is soft and creamy just like the real thing, and thanks to the kala namak (black salt) it also has the eggy flavor.

Ingredients

  • 1 soft or medium firm tofu
  • 1 red onion
  • 1 zucchini
  • 3 scallions
  • 0.25 cup organic soy milk
  • 1 tsp salt or black salt (kala namak)
  • 0.5 tsp turmeric
  • 2 tbsp olive oil
  • 2 tbsp nutritional yeast

Instructions

  1. Prepare the vegetables- wash the zucchini and scallion, peel the onion. Use a grater to grate the zucchini, cut the onion to stripes and slice the scallion diagonally (green part only).
  2. Drain the tofu and crumble using your hands (see photo above).
  3. Over a medium pan, hit the olive oil and add the onion, turmeric and salt. After 2 minutes, add the zucchini and tofu crumbles and fry for 2-3 minutes until slightly golden.
  4. Add the scallions, soy milk and nutritional yeast and mix on low hit just until there are no more liquid.
  5. Taste and adjust, adding more salt, nutritional yeast or soy milk if required.
