Nelly’s Pesto

This vegan pesto spread is absolutely delicious and safe for babies and toddlers.

Basil is such a great addition to your family menu. It’s full of nutrients and so yummy.

Usually, when making a pesto spread I like to use whole nuts, but here I decided to use almond flour instead. This way I’m not worried about grounding the nuts and can happily serve it to my baby, Nelly.

Jar (200 ml)

Ingredients

  • 2 packs of fresh basil
  • 0.25 cup almond flour
  • 2 garlic cloves
  • 0.5 cup olive oil (and some more)
  • 0.5 tsp salt
  • 1 tbsp fresh lemon juice

Instructions

  1. Wash and dry the fresh beastie leaves.

  2. In a food processor, blend the almond flour and garlic. Add the basil leaves, olive oil and salt and blend to a spread.

  3. Taste and adjust, adding the fresh lemon juice and more salt or olive oil if required. Blend again to combine.

  4. Transfer to a clean jar, cover with more olive oil and keep in the fridge.
