It's great for freezing and snacking outside.

Ingredients

  • 1 cup cooked white beans or butter beans
  • 0.5 cup oats
  • 7 medjool dates
  • 0.25 cup natural peanut butter+ some for filling
  • 1 handful frozen berries
  • 0.25 cup hemp seeds (optional)

Instructions

  1. Pit the dates and soak in a bowl with hot water for 5 minutes. Drain and set aside.

  2. Drain the cooked beans.

  3. In a food processor - pulse the oats for a minute to form flour. Add the beans, pitted dates, and peanut butter and blend to form the dough. If very sticky, refrigerate for 15 minutes before rolling.

  4. Chop the frozen berries or pulse to create small crumbs.

  5. Roll the balls - spoon 1 tbsp of dough and flatten to a disk between your hand. Fill with a very small amount of peanut butter and frozen berries and carefully close into a ball. Repeat with the remaining dough.

  6. If you wish, cover with hemp seeds.

  7. Transfer to an airtight container and store refrigerated for up to 3 days or freeze for up to 3 months.

Notes

  • If cooking dry beans - I recommend soaking it in plenty of water for a minimum of 8 hours and only then cooking it. The cooking time will vary (depending on the soak and quality of beans) but should be around 1.5 hours until soft. You can also use a pressure cooker.

  • You can use cooked frozen beans or canned beans as well.
